Squatting in the Dirt

If you see a pregnant lady laying in the dirt on the side of the road, don’t worry too much. If she has a camera and bright green shoes on, she is most likely just fine down there.

I have started to see all kinds of awesome things creeping out of the dirt and dead leaves along my route home. The only problem is that they are so tiny and close to the ground. I am able to squat to get the shots, but I can’t get up super easy. At least the view is nice from down there.

Who Is Sick Of Foliage Pictures?

Not me. And yesterday was Earth Day after all. Spring is starting to get really pretty in these Andersonville, and my walk home has improved 1000% since a few months ago. This calls for DPH walk-home-foliage-shots. I plan on linking to this post mid-January of next year to remind myself that things do get better. I am so giddy to see all of this after I get off the train and before I enter my front door:

Well done, everyone. If you are reading this, it means you lived through one of the worst winters we have had in years. Spring is—OH WAIT…my husband just informed me that this is a silly post to be writing in mid-March. He says that I will get hate mail. Yeah it was 76 today…but please refer to Thursday’s forecast to see why he is making a good case:

Yeah, that “low of 26″ is lame. BUT…I am going to continue to write this against Justin’s wishes. He can get his own sad-blog. Maybe not sad as much as “cautiously optimistic.” Instead of Megagood, it would be titled “PossiblyGood”or “KindaGood.”

Since I am an all-or-nothing person I don’t cautiously optimize anything. It is spring dammit. And when I decide something like that, I will convince myself—and sometimes others—into thinking it is the unquestionable truth. I’m a pretty good salesperson if I really believe in something. (Could a copywriter/editor let me know how to use en dashes vs. em dashes vs. commas??)

Several things happened today that convinced me winter is really over (for the most part):

  1. Lunchtime sunburn. Another park lunch with friends and Pastoral sandwiches. :)
  2. Sidewalks are a piece-of-cake to walk down, without wearing boots…No slush, ice, snow, salt, blinding wind, etc…
  3. I arrived home after work, in the sun.
  4. There are buds on trees. Brave things are growing out of the ground.
  5. The storm windows were put up and the screens came down. Curtains billowed.
  6. Dinner was eaten on the porch. In the sun.
  7. I kind of want to dye Easter Eggs for the first time in 12 years.
  8. I considered eating gelato outside. Which means it may be time to change the masthead.

I didn't wear green on St. Patricks Day, but I appreciated all the green things trying to grow. These are from inside a flower shop, but they are very mossy and green and happy. You can smell the green in this picture.

Napping Face-Down in the Sun

Sunday nights get me down. The weekend is over and it is dark outside and I am kind of sad about it. How can I remedy this? Two things seem to help:

  1. Launder the bed linens. Lame? Maybe. But I am a huge fan of a soft fresh-scented set of clean sheets and blankets on my bed. It is a really simple thing, but seems to make Sunday night a little better, and starts the week off right.
  2. Organize the photos. If the weekend went well, there are usually many photos that tell that story. I am behind a couple days on uploading the happiness photos, and they really added up. Especially since it was above 50 degrees here for 2 days in a row.

Bath Time and Macaroni Muffins

It’s raining, but that is just fine with me. In my last post, I talked about the filthy salt-build-up legacy that we deal with here in Chicago. This weekend of rain is just the bath we need. De-crudding of the city has begun. (As long as it doesn’t snow again. I just can’t even think about that).

Since we are hanging out inside this weekend, it was agreed that we should revisit our mid-winter lifestyle by eating rich buttery foods. Macaroni and cheese was requested. This is an account of the heart-attack inducing meal that followed:

This is right before the little tubes of pasta were filled with cheese. Much like our arteries.

In the spirit of making comfort food entrees in the shape of baked goods (see Meatcake), I have created Macaroni muffins. The macaroni part is loosely based on a recipe I saw on the Food Network. Not only are they are conveniently portion sized, but each one is sort of an “edge piece.” I think you will love them. Paula Deen would squeal with delight.

Disclaimer: Megagood Macaroni Muffins are not healthy. Lets be honest. They are really, really bad. You are not going to make this if you have an issue with calories, butter, saturated fat, cheese, cholesterol, high blood pressure or not dying.

Megagood Macaroni Muffins

  • 3 tablespoons unsalted butter
  • 1 1/2 cups grated Parmigiano-Reggiano
  • 1/4 cup unseasoned dry bread crumbs
  • 1 pound macaroni
  • 1 tablespoons dried sage
  • 6 ounces cubed or shredded mozzarella
  • 8 ounces cubed or shredded sharp Cheddar
  • 4 ounces cream cheese
  • 3/4 teaspoon kosher salt
  • Freshly ground black pepper
  • 1 1/2 tablespoons horseradish
  • 1/2 teaspoon paprika

Directions

Heat oven to broil and arrange rack in top. Grease a muffin tin and set aside. Melt 1 tablespoon of the butter and mix in a medium bowl with 1/2 cup of the Parmigiano and all the bread crumbs until thoroughly moistened; set aside.

Bring a large pot of heavily salted water to a boil. Add pasta and cook for half the time indicated on package.

Reserve 1 cup pasta water and drain pasta.

Return pasta to pot and place over low heat. Stir in sage, remaining butter, reserved pasta water, remaining Parmigiano, cream cheese, Cheddar, Mozzarella, horseradish and season with freshly ground black pepper. Stir constantly until cheeses are evenly melted and the pasta looks well coated. Scoop macaroni mixture into muffin tin and evenly top with bread crumb mixture. Place under broiler until mixture bubbles and top is browned, about 2 to 3 minutes. Sprinkle with paprika. Let sit at least 5 minutes before serving.

Aren’t they precious in their matching attire? We should go to Sears immediately and get a family portrait taken for the Christmas card.

As I was sitting on the couch with my little family here, I realized that it is going to be 64 degrees on Friday. Can I expect another “spring” day in the park? As my friend Casey would say:

Some Comments on the Weather

This is not the traditional happiness post. Sorry to bum you out.

Meh. Today was not the best of days. And it was snowing on the way home. Still snowing as I type this.

As I tunneled my way to the creepy food court at lunchtime, I spotted some goodness. Mind you that this particular food court is known for being extremely unsavory. It is a last resort kind of place. And in no circumstances does anyone at the office actually sit and eat there. There is a loud mechanical buzz that pierces my ears, which I am relying on heavily to navigate, since my other senses have shut down to protect me from the foul environment. Eyes can’t handle the flickering green fluorescent lights. Nose can’t deal with the mingling scents of Popeye’s grease and Middle-eastern food with a side of gross. I also avoid touching anything if at all possible. WHY did you go there, Megan? Cause I was out of my head. And in a gross kind of mood, and kind of wanted to keep in theme for lunchtime.

Back to the goodness that was spotted along the trek. Green plants! Trying to grow! OUTSIDE!!!

I was without my camera, but I plan to go back tomorrow and take a photo of the daffodil sprouts that I saw poking out of the earth in the weird courtyard near the food court. If the snow hasn’t covered up the hopeful green sprouts, you will see them here tomorrow.

I told a bunch of people at the office about what I had seen. No one really cared or said more than “murp” as they continued to stare at their screens. Am I way too excited about this? Leah cared. She was the only one with the proper response to this phenomenon we Chicagoans haven’t seen in some time. Green living plants. <3
