18 Week Sweet Potato Fries

It’s time for another week of maternity and food shots. Seems like time is going REALLY fast by the way. I can’t believe I will be halfway through this pregnancy in only two weeks.

This week, the internet gods of pregnancy have emailed to inform me that baby Boley is about the size of a sweet potato (about 5.5 inches from head to butt). Soon we get to start adding the leg measurements into this equation which means suddenly baby will appear to grow from a something like a grapefruit to a melon within a span of a couple days. This is not exactly the case, but then again this is all very silly with the fruit and veggie thing in the first place.

Once again, the grocery delivery service gave me slightly smaller sweet potatoes than I would have picked out for this shoot, but let’s all pretend they are a bit more rotund. LIKE MY FACE.

I don’t think I have given credit to the photographer, Mr. Boley. He is not super thrilled about being on the cold porch for these shoots, but he is getting used to the idea. Today he made me sing the filet o’ fish commercial and talk on the potato phone so I would loosen up in front of the camera. I would rather be behind the camera taking the photos, but that is clearly impossible in this situation.

Porpus Boley has been a wonderful director of photography throughout the process. She is generally excited to inspect each food item. NOT TODAY. She doesn’t want anything to do with potatoes. They are neither cute nor tasty in her feline opinion.

She is right about this being an ugly food. I added the bunny to up the cute factor.

This week, I made a simple and tasty batch of sweet potato fries. You can find a million websites with different spice blends to put on these guys before baking, but you really don’t need a recipe. Just a few favorite herbs and spices that you aren’t afraid to mix.

Here are some important notes to remember when making sweet potato fries:

  • Make sure they are cut into small, even sized fries. 1/4 inch is a good measurement, anything too large will be a mushy mess.
  • DO NOT crowd the pan. Do a couple batches instead. If you crowd the fries they will steam instead of bake. Hence mush mess.
  • Bake at a high heat. 425 degrees for 15 min. Then turn the fries and return them to the oven for 10-15 more minutes. DO NOT open the oven to peek on them all the time. Let them do their thing. Otherwise, mushy mess.
  • Experiment with different crisping methods. I have heard that soaking the raw fries in cold water for 10 minutes will remove some of the starch and allow for a crisper outcome. I have also heard that tossing them in egg whites is the way to go. Let me know if you find the perfect method.

All in all, they are a healthy and unexpected fry option, that is generally a winner for most people. And if you are pregnant, they have all these wonderful vitamins and nutrients that your baby will love you for. (If you are not pregnant, don’t worry, you are allowed to have nutrients, too.) So skip the McDonalds’ version, and treat yourself to a healthy plate piled high with these seemingly indulgent fries.

It’s raining, but that is just fine with me. In my last post, I talked about the filthy salt-build-up legacy that we deal with here in Chicago. This weekend of rain is just the bath we need. De-crudding of the city has begun. (As long as it doesn’t snow again. I just can’t even think about that).

Since we are hanging out inside this weekend, it was agreed that we should revisit our mid-winter lifestyle by eating rich buttery foods. Macaroni and cheese was requested. This is an account of the heart-attack inducing meal that followed:

In the spirit of making comfort food entrees in the shape of baked goods (see Meatcake), I have created Macaroni muffins. The macaroni part is loosely based on a recipe I saw on the Food Network. Not only are they are conveniently portion sized, but each one is sort of an “edge piece.” I think you will love them. Paula Deen would squeal with delight.

Disclaimer: Megagood Macaroni Muffins are not healthy. Lets be honest. They are really, really bad. You are not going to make this if you have an issue with calories, butter, saturated fat, cheese, cholesterol, high blood pressure or not dying.

Megagood Macaroni Muffins

  • 3 tablespoons unsalted butter
  • 1 1/2 cups grated Parmigiano-Reggiano
  • 1/4 cup unseasoned dry bread crumbs
  • 1 pound macaroni
  • 1 tablespoons dried sage
  • 6 ounces cubed or shredded mozzarella
  • 8 ounces cubed or shredded sharp Cheddar
  • 4 ounces cream cheese
  • 3/4 teaspoon kosher salt
  • Freshly ground black pepper
  • 1 1/2 tablespoons horseradish
  • 1/2 teaspoon paprika

Directions

Heat oven to broil and arrange rack in top. Grease a muffin tin and set aside. Melt 1 tablespoon of the butter and mix in a medium bowl with 1/2 cup of the Parmigiano and all the bread crumbs until thoroughly moistened; set aside.

Bring a large pot of heavily salted water to a boil. Add pasta and cook for half the time indicated on package.

Reserve 1 cup pasta water and drain pasta.

Return pasta to pot and place over low heat. Stir in sage, remaining butter, reserved pasta water, remaining Parmigiano, cream cheese, Cheddar, Mozzarella, horseradish and season with freshly ground black pepper. Stir constantly until cheeses are evenly melted and the pasta looks well coated. Scoop macaroni mixture into muffin tin and evenly top with bread crumb mixture. Place under broiler until mixture bubbles and top is browned, about 2 to 3 minutes. Sprinkle with paprika. Let sit at least 5 minutes before serving.

Brown Paper Packages Tied Up with String

What is better than coming home to an unexpected package in the mail? Cookies within! And homemade beef jerky, hand knit hat, CHAPSTICK!!, and a delicious citrus candle. My mom-in-law Donna sends us goody packages throughout the year for holidays and special occasions. The Valentines one we received today had ample love in it. The only thing that compares to getting one of these in the mail, is when my grandma used to send me cookies when I was in school. She somehow would get the peanut butter inside the middle of a chocolate cake style cookie. People would show up in my dorm room with glasses of milk. Just there to “hang out…” with my cookies.

Porpus immediately got up on the table to check out the Mercutio-the-dog-scented box on the table. To her joy (torment?) she found a piece of yarn that was to her liking. She wore it for about 45 minutes while I cooked dinner. Please don’t tell her it makes her look fat.

I was so happy to be back in my kitchen instead of eating thai/pizza/chinese food at a conference table with overhead lighting and un-washed creatives, that I have to upload a bonus photo of happiness for the day. My produce plate! Oh, happy produce plate. The attractive Lemons and Pears are so nice to let Garlic sit at the cool kids table. Garlic feels really lumpy next to Tomato, and would prefer not to be judged on looks alone.
